Ajo Blanco (Spanish White Gazpacho)

A delicate Spanish vegan gazpacho with pureed marcona almonds and green grapes, drizzled with harissa.


What You'll Need

1 ¼ cup Blanched Marcona Almonds
3 cups Vegetable Broth - Made with Custom Culinary® True Foundations™ Vegetable Liquid Stock Concentrate
3 Tbsp. Custom Culinary® Masters Touch® Roasted Garlic Flavor Concentrate
1 tsp. Custom Culinary® Gold Label Harissa
2 Tbsp. Spanish Extra Virgin Olive Oil
To taste Salt and Pepper
8 oz. Fresh crustless old world-style bread, 1" cubes
1 cup  Pressed seedless green grapes
1 tsp. Smoked Paprika
PREPARATION

  1. Place the first 4 ingredients in a high speed blender and incorporate until smooth, reserving a ¼ cup of almonds
  2. Adjust seasoning
  3. Add olive oil and blend on low
  4. Press grapes in a vacuum sealer
  5. Slice grapes in half and garnish
  6. Toast remaining ¼ almond slivers for garnish
  7. Drizzle with Harissa and a small sprinkle of smoked Spanish paprika
