1/2 cup Vegetable Oil
10 lbs. Beef Stew Meat, cut into 2" cubes
3 lbs. Onions, Large Diced
6 oz. Flour
1 gallon Water, Hot
8 oz. Custom Culinary® Gold Label Low Sodium Beef Base
2 lbs. Carrots, 1/4" Round Slices
2 lbs. Celery, 1/4" Bias Cut
2 lbs. Potatoes, 3/8" Dice
3 lbs. Asparagus, Tips & Pieces, Frozen
1 tsp. Black Pepper
PREPARATION

  1. In a large braising pan or tilt skillet, heat oil over medium high heat. Divide beef and onions into 4 parts. Add beef and onions to hot oil. Brown beef evenly. Sauté until onions are translucent. Transfer beef and onions to an 4 gallon sauce pot or 5 gallon steam jacketed kettle.
  2. Add flour to braising pan or tilt skillet, mixing well with a wire whip. Cook over medium heat 2-3 minutes, stirring constantly.
  3. Add water and Custom Culinary® Gold Label Low Sodium Beef Base, mixing well. Heat to boiling. Reduce heat and gently boil 5-7 minutes, stirring frequently into a smooth gravy.
  4. Add gravy, carrots, celery, and potatoes to browned meat and onions. Gently boil 25-35 minutes, stirring occasionally. Add asparagus, gently boil 5-7 minutes.
