Beef Barley & Vegetable Soup - All Natural

What You'll Need

Amount Ingredients
1 cup Pearled Barley, Dry
1 qt Water
2 Tbsps All Natural Canola Oil
1-1/2 cups Celery, Small Diced
1-1/2 cups Onions, Yellow, Small Diced
1-1/2 cups Carrots, Small Diced
1 tsp. Garlic, Fresh, Minced
3 qts Water
1/3 cup approx. Custom Culinary® Gold Label True Foundations Beef Base
17 oz. Top Round Beef, Trimmed to 0" Fat, Cooked, Small Diced
1 cups Tomatoes, Diced, Canned in Juice
1/8 to 1/4 tsp - to taste White Pepper, Ground
PREPARATION

  1. In a 2 quart sauce pan, heat barley and water to boiling. Reduce heat and gently boil 45-50 minutes until tender. Rinse under cold water, drain. Set aside.
  2. In a 2 gallon stock pot over medium high, heat oil. Add celery, onions, carrots, and garlic. Sauté 5 minutes.
  3. Add water, Gold Label True Foundations Beef Base, beef, tomatoes and pepper. Mix well. Heat to boiling, stir occasionally. Add cooked barley; gently boil 10-15 minutes.
