Caribbean Black Bean Soup

What You'll Need

Amount Ingredients
1 Tbsp. Olive Oil
2 each Onions, Small Diced
3 cloves Garlic, Finely Chopped
1 each Jalapeño Pepper, Finely Diced
3-1/2 qts Water
1 each Tomato, Diced, 14 oz. can
1 each Bay Leaf
3 oz. Custom Culinary® Gold Label Ham Base
3 oz. Custom Culinary® Master’s Touch® Southwest Flavor Concentrate
1 lb Black Beans, Dried,
1 lb Smoked Sausage, Diced, Cooked
to taste Black Pepper and Salt
PREPARATION

  1. Soak dried beans covered in in water overnight for best results.
  2. Heat oil over medium heat. Sauté onions for five minutes. Add garlic and jalapeño pepper and cook for one more minute.
  3. Add the water, diced tomato, bay leaf, black beans, Custom Culinary® Gold Label Ham Base and Master’s Touch® Southwest Flavor Concentrate. Bring to a boil and simmer for one hour, stirring occasionally.
  4. Add smoked sausage and cook 30 minutes to one hour more or until beans are done. Adjust seasoning with salt & pepper to taste.
