Cream of Chicken Soup

2 lbs. Onions, Medium Diced
1 lb. Celery, Sliced Thin
1 lb. Carrots, Small Julienne or Coin Cut
6 oz. Butter
4 ½  gal. Water, Hot
12 oz. Custom Culinary® Gold Label Chicken Base
4 oz. Custom Culinary® Gold Label Mushroom Base
3 (20-oz.) bags Custom Culinary® Whisk & Serve® Cream Soup & Sauce Starter
3 lbs. Chicken Meat, Cooked, Diced
1 tsp. White Pepper, Ground
PREPARATION

  1. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle, melt butter over medium heat. Add onions, celery and carrots. Sauté 5-7 minutes over medium heat, stirring frequently.
  2. Add Gold Label Chicken and Mushroom Bases and water, mixing well.
  3. Gradually add Whisk & Serve® Cream Soup & Sauce Starter, mixing well with a wire whip. Heat to a gently boil for 5 minutes, stirring frequently.
  4. Add chicken and white pepper, heat to boiling. Reduce heat and gently boil 5-7 minutes, stirring occasionally.
