Farm-Style Corn Chowder

6 oz. Bacon, Thick Cut, Small Diced
2 Tbsps Butter, Salted
1 cup Onions, Yellow, Fresh, Medium Diced
1/2 cup Green Bell Peppers, Sweet, Fresh, Medium Diced
1/2 cup Celery, Fresh, Medium Diced
4 oz. All Purpose Flour, Bleached, Enriched
3 qts Water, Got
6 oz. Custom Culinary® Gold Label Chicken Base
2 cups Cream, Half & Half, Hot
2-1/2 lbs Corn, Yellow, Whole Kernel , Frozen
3-1/2 cups Creamed Corn, Golden, Super Sweet, Canned
1 lb Potatoes, Medium Diced
1/8 tsp. White Pepper, Ground
1/8 tsp. Red Pepper Sauce
1/8 tsp. Worcestershire Sauce
PREPARATION

  1. In a 12 qt sauce pot over medium high heat, sauté bacon until browned, approximately 7 minutes. DO NOT DRAIN FAT.
  2. Add butter; heat until melted. Add onions, peppers and celery; sauté 3 minutes.
  3. Blend in flour; cook over medium heat 2-3 minutes, stirring constantly.
  4. Add water, Custom Culinary® Gold Label Chicken Base, milk, whole kernel corn, creamed corn, potatoes, white pepper, red pepper sauce and Worcestershire sauce, mixing well. Heat to boiling over medium high heat, stirring constantly. Reduce heat and gently boil until potatoes are cooked al dente, 8-10 minutes, stirring occasionally.
