Ham, Cabbage and Potato Soup

Yield: 2 gallons

Amount Ingredients
2 lbs Ham, Small Diced
1 qt Onions, Small Diced
2 cups Carrots, Small Diced
2 cups Celery, Small Diced
2 tsps Garlic, Minced
2 gallons Water, Hot
6 oz. Custom Culinary® Gold Label Ham Base
3-1/2 lbs (1/2 of #10) can Tomatoes, Canned, Diced, Drained
2-1/2 qts Potatoes, Small Diced
3-1/2 qts Cabbage, Medium Diced
1/2 tsp. White Pepper, Ground
PREPARATION

  1. In a 4 gal. stock pot or 5 gal. steam-jacketed kettle, sauté ham for 5-7 minutes.
  2. Add onions, carrots celery, and garlic. Sauté for 5-7 minutes.
  3. Add water, Custom Culinary® Gold Label Ham Base, tomatoes, potatoes, cabbage and pepper. Heat to boiling over medium-high heat, stirring occasionally. Reduce heat and gently boil until potatoes are tender, approximately 12-15 minutes, stirring occasionally.
