Amount Ingredients
4 Tbsps Butter, salted
3/4 cup Onions, small diced
3 qts Watrer, hot
4 Tbsps Custom Culinary® Gold Label Chicken Base
4 lbs Peas, fresh or frozen
1/4 cup Mint leaves, chopped
1/16 tsp - to taste White pepper, ground
PREPARATION

  1. In a 2 gallon soup pot over medium high heat, sauté onions in butter until translucent.
  2. Add water and chicken base, blend thoroughly and bring to a boil.
  3. Add peas. Reduce heat and simmer approx. 5 minutes.
  4. Add mint and white pepper. Using an immersion blender, puree until smooth. Simmer 2-3 minutes. Adjust seasoning if needed
