Al Pastor Grilled Shrimp & Pineapple Parfait

Grilled shrimp and charred pineapple are tossed with avocado, scallions, bell peppers, lime juice and cilantro all topped with a zesty al pastor sauce.

What You'll Need

3 oz. Shrimp, tail off, char-grilled, chopped, medium
1 oz. Pineapple, char-grilled, small dice
1 oz. Cucumber, peeled, de-seeded, small dice
¼ oz Onion, red-small diced
¼ oz. Peppers, bell, red-small diced
¼ oz. Avocado, small diced
1 T. Custom Culinary® Jalapeno Relish
2 tsp. Lime, juice, fresh
1 T. Cilantro
 12 ea. Crackers, saltine
1 ea. Custom Culinary® Al Pastor Sauce (3 oz.)
PREPARATION

In a small stainless-steel bowl, gently toss the cold shrimp, pineapple, cucumber, onion, peppers, avocado, jalapeno relish, lime juice and cilantro.
 
Serve in a clear glass with a side ramekin of the al pastor sauce and crackers.
