Chicken Tikka Masala Naan with Spicy Harissa Yogurt Crema

Yield: 80 four-inch sandwiches

  Chicken
5 lbs. Chicken thighs, boneless, skinless
1 pint True Foundations Tikka Masala Sauce
1 pint True Foundations Tikka Masala Sauce - set aside
   
  Pickled Slaw
1/2 head Cabbage
1/2 each Red onion, sliced
1/2 cup Parsley, chopped
1/4 cup Apple cider vinegar
1 ea Lemon, juiced
to taste Salt and pepper
   
  Harissa Yogurt
1 cup Plain yogurt
1 cup True Foundations Harissa Sauce
   
  Naan
80 ea Naan bread, 4 inch, round
   
Garnish Microgreens 
PREPARATION

CHICKEN
  1. Marinate cleaned chicken thighs in Tikka Masala Sauce overnight
  2. Char-grill chicken thighs
  3. Large dice chicken thighs and set aside for service
 
PICKLED SLAW
  1. Shred cabbage and place in a bowl
  2. Slice red onion and add to cabbage
  3. Chop parsley and add to the cabbage mixture
  4. Add apple cider vinegar and lemon juice to slaw mix
  5. Salt and pepper to taste and set aside
 
HARISSA YOGURT
  1. Mix yogurt and harissa together and season with salt and pepper
 
NAAN
  1. Warm 4-inch round naan bread on flat top
  2. Set aside
 
ASSEMBLE
  1. Place warm naan on plate
  2. Add hot chicken that has bee tossed in additional tikka masala sauce
  3. Drizzle with harissa yogurt
  4. Top with pickled slaw
  5. Garnish with microgreens
