Deviled Seafood Hollandaise Sauce

1 qt. Custom Culinary® Gold Label Hollandaise Sauce
1 tsp. Soy Sauce
1 cup Sour Cream
1/2 cup Mayonnaise
2 Tbsp. Horseradish
2 Tbsp. Capers, Diced Fine
1 Tbsp. Tarragon Wine Vinegar
1 tsp. Tarragon, Dried, Leaf
1/8 tsp. White Pepper, Ground
4 oz. Butter, Lightly Salted
4 lbs. Shrimp, 21-30/lb, Large Diced
2 lbs. Scallops, Bay
1 lb. Crab Meat, Lump Style
1-1/2 lb. Sharp Cheddar Cheese, Grated
PREPARATION

  1. In a 2 qt. sauce pot, heat Gold Label Hollandaise Sauce over medium heat, mixing well. Turn off heat.
  2. Add soy sauce, sour cream, mayonnaise, horseradish, capers, tarragon vinegar, tarragon, and white pepper, mixing well. Heat to a gentle boil, stirring frequently. Keep hot.
  3. In a large sauté pan, melt butter over medium heat. Add seafood. Sauté 4-6 minutes. Drain off any excess liquid. Add hollandaise sauce mixture, mixing gently. Heat to a gentle boil, stirring occasionally. Pour mixture into a 2" hotel pan.
  4. Sprinkle cheddar cheese over seafood mixture. Place under a broiler or salamander until cheese is melted and slightly browned.
