Firecracker Meatballs

Mini beef meatballs glazed in a sweet-spicy firecracker sauce enhanced with Gold Label Beef Base, served warm with scallions and sesame.

  Meatballs
3 lbs. Ground beef (80/20 or 85/15)
3 Tbsp. Gold Label beef base
1 cup Bread Crumbs
2 ea. Eggs
1 Tbsp. Minced garlic
to taste Ground black pepper
  Firecracker Glaze
1 cup chili sauce or sweet chili sauce
1/4 cup sriracha (adjust heat to preference)
1/4 cup water
1 Tbsp. Gold Label Beef Base (whisked in for depth)
1 Tbsp. rice vinegar
  Garnish
  Sliced scallions
  Sesame Seeds
PREPARATION

Make Meatballs
  1. Combine ground beef, breadcrumbs, eggs, garlic, pepper, and 3 Tbsp Beef Base
  2. Mix gently to avoid toughness
  3. Form into 1-ounce mini meatballs
  4. Bake at 400°F for 12–15 minutes until fully cooked

Make Firecracker Glaze
  1. In a small saucepan, warm chili sauce, sriracha, water, vinegar
  2. Whisk in 1 Tbsp Beef Base until dissolved
  3. Simmer 3–4 minutes to thicken slightly
Firecracker Meatballs
  1. Portion glazed meatball into serving dish
  2. Spoon additional glaze over top
  3. Garnish with scallions and sesame
