Marsala Shallot Jam Crostini

Crisp crostini topped with a sweet and savory Marsala shallot jam made from thinly sliced shallots, olive oil, brown sugar, Custom Culinary® Gold Label Marsala Sauce, and balsamic vinegar, then finished with creamy whipped feta. The combination of caramelized sweetness and tangy richness creates a perfectly balanced bite, ideal for appetizers or small plates.

Yield: ~125 crostini (~3 qt jam)

2 cups Shallots, thinly sliced
2 tbsp. Olive Oil
½ cup Brown Sugar
2 qts. Custom Culinary® Gold Label Marsala Sauce
¼ cup Balsamic Vinegar
125 ea. Crostini
4 cups Feta, whipped
PREPARATION

  1. Heat olive oil in a large sauté pan over medium-low heat. Add shallots and cook slowly, stirring often.
  2. Continue cooking 30–45 minutes until deeply browned and caramelized.
  3. Add brown sugar, Marsala Sauce, and balsamic vinegar. Cook until shallots are glazed and sauce has reduced to jam-like consistency.
  4. Cool jam slightly before storing.
  5. For service, spread jam onto crostini and top with a knob of whipped feta.
