1 cup Gold Label Savory Roasted Vegetable Base
4 cups roasted mixed vegetables (fine chopped: carrot, cauliflower, potato, onion)
2 cups cooked chickpeas, mashed
1 cup fine bread crumbs
2 tsp ground cumin
2 tsp ground coriander
brushing olive oil
PREPARATION

  1. Combine roasted vegetables, chickpeas, breadcrumbs, spices, and Savory Roasted Vegetable Base
  2. Mix thoroughly; chill 20 minutes to firm.
  3. Form into 1-oz mini kofta ovals.
  4. Brush lightly with oil; bake at 400°F for 12–15 minutes.
  5. Hold hot in a covered hotel pan.
  6. Optional: quick sear on the flat top grill before serving.
