Turkey Saltimbocca

QTY INGREDIENTS
2 qt Water
13.6 oz Custom Culinary® Master’s Touch® Turkey Gravy Concentrate (one jar)
2 cups Wine, white
¼ cup Sage, fresh, leaves, chopped
32 ea Turkey, cutlets, panko breaded, 4-ounce portion
3 lb Prosciutto, sliced, 1/8” thick
2 lb Provolone, sliced
4 lb Haricot Verts, cooked 
PREPARATION

Sauce
  1. In a saucepan add water and bring to a boil.
  2. Add turkey concentrate and whisk until sauce is smooth.
  3. Add wine, sage, and simmer gently for 5-10 minutes.
  4. Keep warm for service.
 
Cutlets
  1. In a large oven, safe skillet or sauté pan add olive oil and butter.
  2. Pan-fry cutlets in a hot sauté pan over medium-high heat until cutlets are golden brown and crispy (about 2-3 minutes per side).
  3. Drain excess fat from the pan and top with 1 ½ ounces of prosciutto and 1 ounce of provolone cheese.
  4. Place pan into a hot oven to warm prosciutto and melt cheese.
 
Final Plating
  1. Remove from the oven when the cheese is melted and the turkey cutlet reaches a minimum temperature of 165º F.
  2. Place the cutlet on a large plate and top with 2 ounces of sauce around the perimeter of the cutlet.
  3. Serve with prepared Haricot Verts.
