Amount Ingredients
2 oz. Olive Oil
2 cups Onions, Sliced
2 cups Roasted Green Chilies, Diced
1/2 Tbsp. Garlic, Fresh, Minced
1/2 cup Pistachios, Shelled
1/2 cup Water
1 Tbsp. Custom Culinary® Master's Touch® Chicken Base
1/4 tsp. White Pepper, Ground
6 lbs. Chicken, Cooked, Boneless, Skinless, Legs and Thighs
PREPARATION

  1. In a 4 quart sauce pan over medium heat, sauté onions in oil 2-3 minutes. Add peppers and garlic, cook 1 minute. Add pistachios, cook 2-3 minutes. Stir occasionally.
  2. Place cooked pepper mixture in blender, add water, Master's Touch® Chicken Base and pepper, purée for 1 minute. Hold hot until needed.
  3. Place pre-cooked chicken legs in baking pan, pour purée over and place in 350°F oven for 30 minutes.
