Vietnamese Pho Glazed Grilled Beef Skewers

1 qt.Passport Global Flavors by Custom Culinary Beef Pho Broth
4 Tbsp.Corn Starch
5 lbs.Beef Flank Steak, Thin, Long Slices, Placed on Wooden Skewers
3 Tbsp.Cracked Multi Colored Peppercorns
2 cupsShallots or Red Onions, Thin Sliced Rings, Fried
1/2 cupGreen Onions, Sliced Thin
1/2 cupSweet Peppers, Assorted Colors, Sliced Thin, Cooked

  1. In a small sauce pot before heating, blend Beef Pho Broth with corn starch, whisking to fully dissolve.
  2. Place on medium high heat and while stirring continuously, cook 3-4 minutes until the mixture is fully thickened and the cloudy color has turned clear. Taste to assure the starch flavor has been cooked out. Finished mixture should be a thick glaze consistency.
  3. Remove from stove and hold warm.
  4. Season beef skewers with cracked peppercorns.
  5. Grill beef on a char grill, cooking each side 2-3 minutes.
  6. Remove to a baking sheet pan.
  7. Brush all sides with Pho glaze.
  8. Place in a 350°F oven for additional 10-12 minutes to desired temperature and allowing the Pho glaze to sear.
