Moroccan Lamb Sliders

QUANTITY INGREDIENTS
  SLIDERS
2 lb Ground Lamb
¼ cup Shallots, Minced
1 ea Whole Egg
3 Tbsp Dijon Mustard
2 Tbsp Ground Coriander
1 cup Bread Crumbs
   
  RELISH
2 cup Seedless English Cucumbers, Brunoise
1 cup Beef Steak Tomato, Brunoise
2 Tbsp Shallots, Brunoise
½ cup Dry Cured Olives
1 ½ Tbsp Scallions, Sliced
To taste Salt & Pepper 
1 cup Halloumi Cheese, Fine Dice
1 Tbsp Mint, Chiffonade
PREPARATION

Relish
  1. Mix all ingredients together and chill for assembly
 
Lamb Sliders
  1. Combine all ingredients in a chilled bowl and blend until all ingredients are blended (Do not over-mix)
  2. Using a #30 Ice cream scoop, make oval-shaped patties.
  3. Grill lamb patties until medium rare.
  4. Place on mini pita pocket and garnish with 1 Tbsp. of relish.
  5. Drizzle with a small amount of Harissa and Greek Yogurt
