Latin Herb Pineapple Sorbet

Yield: 12 Portions

Sorbet  
11/2 Cups Water
1-Cup granulated sugar
1/4-Cup Honey or Agave
1/4-Cup Fresh lime juice
2-Tbsp Latin Herb Liquid Flavor Concentrate
Pinch Kosher salt
Garnish  
1 each pineapple, peeled, cored
1/2 cup caster sugar 
PREPARATION

Make the Syrup
  1. Combine water, sugar, and honey in a saucepan.
  2. Bring to a simmer, stirring until fully dissolved.
  3. Remove from heat and cool completely. Blend
  4. In a high-speed blender, combine pineapple, cooled syrup, lime juice, Latin Herb Liquid Flavor Concentrate, and salt.
  5. Blend until completely smooth.
  6. Taste and adjust acidity or sweetness if needed. The flavor should be bright and clean, not savory. Freeze
  7. Chill base thoroughly, at least 2 hours.
Spin the chilled base
  1. Churn in an ice cream machine according to manufacturer’s instructions until smooth and scoopable.
  2. If no machine is available, freeze in a shallow pan and stir every 30 minutes until frozen and smooth.
Garnish
  1. Cut pineapple into spears, and then slice into 1/2" thick triangles.
  2. Dry with a food contact safe towel and apply caster sugar.
  3. Brule with torch on heavy duty sheet tray or roasting pan.
