Latin Herb and Lime Shortbread Cookies

Recipe Ingredients

Yield: 24 Cookies

Shortbread  
1 lb (4 sticks)  unsalted butter,  softened
1 cup  powdered sugar
1 Tbsp  lime zest (about 2 limes)
2 Tbsp  fresh lime juice
1 1/2 Tbsp Latin Herb Liquid Flavor Concentrate
1 tsp  vanilla extract
1/2 tsp  kosher salt
4 1/2 cups  all-purpose flour
Glaze  
1 cup  powdered sugar
2 Tbsp  fresh lime juice
1 tsp  lime zest (optional for extra flavor)
PREPARATION

Mix
  1. In a mixer with paddle attachment, cream butter and powdered sugar on medium speed until smooth but not fluffy.
  2. Add lime zest, lime juice, Latin Herb Liquid Flavor Concentrate, vanilla, and salt. Mix until evenly incorporated.
  3. Reduce speed to low and add flour in stages, mixing just until dough comes together. Do not overmix.
  4. Divide dough in half and form into rectangular logs (about 2 inches in width and 1.5" in height).
  5. Wrap tightly and refrigerate at least 1 hour or until firm.
Bake
  1. Preheat oven to 325°F.
  2. Slice dough into 1/2-inch rectangles and place on parchment-lined sheet pans.
  3. Bake 18–22 minutes, rotating pans halfway, until edges are set and bottoms are lightly golden.
  4. Cool completely on racks.
Glaze
  1. In a small mixing bowl, add the lime juice and zest, and incremendtally add in the powdered sugar while mixing with a whisk to reach a glaze like consistency
