Asian Chicken Salad

Eating healthy never tasted so good, with this innovative take on a chicken salad. Featuring Custom Culinary® Gold Label Wasabi Ginger Ponzu Sauce, Asian Chicken Salad mixed greens, edamame, pineapple tidbits, red pepper mushrooms, and glazed chicken with Wasabi Ginger Ponzu Vinaigrette.

Amount Ingredients
  Wasabi Ginger Ponzu Vinaigrette:
1/2 cup Vegetable Oil
1-1/4 cup Custom Culinary® Gold Label Wasabi Ginger Ponzu Sauce
1/4 cup Rice Wine Vinegar
  Salad:
2 cups Mixed Field Greens
2 Tbsp. Edamame
2 Tbsp. Pineapple Tidbits
2 Tbsp. Red Pepper, Thin Sliced
2 Tbsp. Shiitake Mushrooms, Thin Sliced
2 Tbsp. Wasabi Ginger Ponzu Vinaigrette (recipe instructions below)
5 each 3/4 oz. Chicken Breast Tenderloins, Cooked and Glazed with Wasabi Ginger Ponzu Sauce
PREPARATION

  1. To make Wasabi Ginger Ponzu Vinaigrette: Blend Gold Label Wasabi Ginger Ponzu Sauce, vegetable oil and vinegar. Refrigerate until needed.
  2. In a medium bowl, toss mixed greens, edamame, pineapple tidbits, red pepper and mushrooms with Wasabi Ginger Ponzu Vinaigrette. Coat evenly and place on serving plate.
  3. Top with glazed chicken.
