Asian Style Ramen Broth Bowl - Tonkotsu Style

3 oz. Fresh Ramen Noodles, Prepared, Hot
1 oz. Bok Choy Leaves, Blanched
2 Tbsp. Fresh Enoki Mushrooms
1 Tbsp. Thai Red Chilies, Thin Sliced
2 Tbsp. Fresh Bean Sprouts
  Pork Chashu Poached Pork Belly
1 cup Soy Sauce
4 oz. Custom Culinary® Tonkotsu Ramen Pork Broth
1 cup Mirin
1/2 cup Sugar
1 cup Sake (optional)
6 ea. Scallions, Fine Chopped
2 Tbsp. Fresh Ginger Root, Peeled and Sliced
10 oz. Custom Culinary® Tonkotsu Ramen Pork Broth
  Marinated Hard Boiled Egg
1 cup Water
1 Cup Soy Sauce
1 cup Sake (optional)
1/2 cup Sugar
1/2 cup Mirin
2 Tbsp. Green Onions, Sliced
1/4 oz. Fresh Lime Juice (optional)
PREPARATION

  1. For the Marinated Hard-Boiled Egg recipe, rinse eggs and place into a small stainless-steel pan- cover with marinate, place film wrap on top and keep eggs submerged for 8-12 hours refrigerated. Discard marinating liquid and carefully slice eggs in half lengthwise, hold refrigerated.
  2. For Pork Chasu recipe, blend ingredients in a medium pot and bring to a simmer. Add 2 lbs. of thick sliced pork belly (non-smoked) and cut into 3" lengths. Poach 3-5 minutes. Do not boil. Remove from liquid and chill - serve one slice per portion.
  3. Once the Marinated hard-boiled eggs and Pork Chashu are complete, layer noodles, broth, proteins, vegetables, and toppings in bowl.
