Chicken Piccata

Amount Ingredients
1 tsp. Custom Culinary® Gold Label Chicken Base, No MSG Added
5 each Chicken Breast Medallions, 1 1/2 oz. each, Pounded Thin
2 Tbsp. Flour Seasoned with Black Pepper
1-1/2 oz. Butter
2 oz. Custom Culinary® Gold Label Beurre Blanc Sauce
1 Tbsp. Capers, Jarred, Drained, Rough Chopped

  1. Season all five pieces of chicken evenly with Gold Label Chicken Base.
  2. Lightly dust each chicken medallion with flour.
  3. In a large sauté pan over medium high heat, melt butter and sauté each chicken medallion 1-2 minutes on each side until golden and cooked to desired temperature. Place on serving plate.
  4. Picatta sauce: Blend capers with Gold Label Beurre Blanc Sauce; lace sauce over sautéed medallions.
