Eggplant and Black Lentil Curry

Yield: 20 servings

PREPARATION

  1. Season diced eggplant with the oil and spices and toss until well coated.
  2. Spread seasoned eggplant on sheet tray and roast in pre heated 375 F oven (Approximately 20 minutes).
  3. Sauté jalapenos and onions in vegetable oil in medium sauce pot until onions are soft and translucent.
  4. Add black lentils and tomatoes and toss until hot.
  5. Add Tikka Masala Sauce and bring to a simmer.
  6. Hold for service.
