Fennel Pork Roast Sonoma

Featuring Custom Culinary® Gold Label Pork Base and Custom Culinary® Master’s Touch® Demi-Glace Sauce Concentrate, Fennel Pork Roast Sonoma combines the rich flavors of pork, tomatoes, red wine vinegar, garlic, red wine, and fennel seeds.

12 lbs. Pork Loin, Boneless
1/4 cup Custom Culinary® Gold Label Pork Base
1 # 10 can Tomatoes, Whole, Canned in Purée
1 jar (13.6 oz.) Custom Culinary® Master’s Touch® Demi-Glace Sauce Concentrate
1/2 cup Red Wine Vinegar
1/2 cup Garlic, Minced
1-1/2 qts. Red Wine
2 Tbsp. Fennel Seed, Crushed
PREPARATION

  1. Rub pork with Gold Label Pork Base. Place in roasting pan. Roast at 350°F for 45 minutes, turning once to evenly brown. Remove from oven.
  2. Prepare Master’s Touch® Demi-Glace Sauce Concentrate according to package directions.
  3. Combine demi-glace, tomatoes, red wine, red wine vinegar, minced garlic and fennel. Purée in a blender until smooth.
  4. In a 2 gallon sauce pot add sauce. Heat to boiling. Reduce to a gentle boil for 20 minutes, stirring occasionally. Pour sauce over pork. Return to a 375°F oven for 45 minutes or until pork is done. Slice pork and serve with sauce.
