Marinated flat iron steak grilled to tender perfection and sliced against the grain, served with a smoky charred corn salad tossed with cotija, red onion, and fresh cilantro for a bright, Latin-inspired contrast.

Recipe Ingredients

Yield: 10-12 Portions

6 lbs. Flat-iron, seamed & trimmed
Steak Marinate  
1/4  cup  Soy Sauce
1/2 cup Light EVOO
1 tbsp. Latin Citrus Liquid Flavor Concentrate
1 1/2 Tbsp.  Latin Chili Liquid Flavor Concentrate
1 tsp.    Minced Garlic
Juice of  1 Lime
Charred Corn & Cotija Salad  
10 ears Sweet corn, husked
1 tbls Avocado oil
1 cup Cotija cheese, crumbled
1/2 cup Thinly sliced red onion
1/2 cup Fresh Cilantro, chopped
1/2 cup lemon sgrements
1/2 cup orange sements
Chili Lime Dressing  
1/2 cup Mayo
1/4 cup Sour cream
1/4 cup Fresh lime juice
2 tbsp Latin Chili Liquid Flavor Concentrate
1 tbsp Light Olive Oil
1 tsp Honey
To-Taste Sea salt
Garnish  
1/4 cup picked cilantro leaves
PREPARATION

Steak
  1. In a small bowl, prepare marinade - Place steak in marinade, Sous Vide - Place in large pouch and vacuum seal, place in 125f for approx. 2 hours or Traditional Overnight method cover, and refrigerate 4–12 hours.
  2. Remove steak from marinade and allow excess to drip off. Lightly season with salt if needed.
  3. Grill over medium-high heat, 4–5 minutes per side, to medium-rare or desired doneness.
  4. Rest 10 minutes, then slice against the grain.
Charred Corn & Cotija Salad
  1. Lightly oil corn and grill until charred on all sides.
  2. Cool slightly, then cut kernels from the cob. Toss corn with cotija, red onion, and cilantro.
  3. Chill or hold at room temperature.
Chili Lime Dressing
  1. Whisk all ingredients until smooth.
  2. \Adjust acidity or heat as needed.
