Green Chilaquiles in a Roasted Tomatillo Serrano Sauce

What You'll Need

32 oz Passport Global Flavors By Custom Culinary® Tomatillo Serrano Sauce
1 lb Crispy corn tortilla chips
1/2 cup onion, thinly sliced
1/4 cup cilantro, chopped
1/2 cup queso fresco, crumbled
1/4 cup Mexican crema
12 Eggs
PREPARATION

  1. Place Tomatillo Serrano Sauce in pan and bring to a boil.
  2. When the sauce is hot, quickly, but carefully, add the tortillas.
  3. Stir the tortillas into the mixture so that they are fully coated with the sauce.
  4. Serve the tortillas and salsa on a large plate garnished with the sliced onions, crumbled Mexican queso fresco.
  5. Drizzle with the crema, garnish with chopped onion and cilantro and top with sunny side up eggs. 
  6. Serve immediately.
