Yield: 4 portions

12 oz Tofu, extra firm, sliced (4 slices)
¼ cup Plant-based pesto
1 cup True Foundations® Plant-Based Alfredo Sauce
12 oz Tomatoes, sliced
As needed Salt and pepper
Drizzle Balsamic glaze
PREPARATION

  1. Arrange sliced tofu on a tray
  2. Top each slice with 1 tsp of pesto
  3. Spread over the entire surface and allow to marinate for at least 15 minutes
  4. Meanwhile, prepare the sauce by combining hot Plant-Based Alfredo Sauce and the remaining pesto (hold hot until service)
  5. Season the tomato slices with salt and pepper
  6. Place the tomatoes and tofu on a hot grill and heat through
 
To plate:
  1. Place grilled tomato on a plate
  2. Top with grilled tofu
  3. Top with 2 oz of the sauce
  4. Lace with the balsamic glaze
  5. Garnish with fresh herbs as desired
