Kimchi Cauliflower Fried Rice

A plant-forward twist on an ethnic takeout favorite. Featuring Custom Culinary® Korean-Style Sweet Heat Sauce and Kimchi Prep, Kimchi Cauliflower Fried Rice consists of crunchy riced cauliflower stir-fried together with with kimchi, scallions, and edamame, then topped with a sunny side up egg with a drizzle of Korean-Style Sweet Heat Sauce.

What You'll Need

  Fried Rice
1 Tbsp Vegetable oil
3 each Scallions-slice on bias - reserved dark green parts
1 1/2 cups Kimchi - chopped (see subrecipe)
1 Tbsp Kimchi liquid (see subrecipe)
3 1/4 cup Riced Cauliflower
3/4 cup Cooked edamame
2 tsp. Soy sauce
2 tsp. Sesame oil
4 ea. Eggs
4 oz Custom Culinary Korean-style Sweet Heat Sauce
16 oz Napa Cabbage
1-2 oz  Custom Culinary Kimchi Prep 

Shred a small head of Napa cabbage
Massage the Kimchi Prep thoroughly with the shredded cabbage
Refrigerate 2 hours
Fried Rice
Heat large non-stick skillet over medium heat and add the vegetable oil
Add scallion whites and light green parts (reserve dark green)
Add chopped prepared kimchi
Add kimchi liquid
Stir in riced cauliflower
Cook, stirring constantly, for 2 minutes
Add edamame, soy sauce, and sesame oil
Continue to cook until cauliflower is tender
Remove from heat. Stir in remaining dark green scallions and fresh cilantro
Top with a sunny side up egg and drizzle with Sweet Heat Sauce
Serve immediately
