Marsala and Porcini Mushroom Flank Steak

Amount Ingredients
5 lbs. Flank Steak
2 Tbsp. Dry Italian Seasoning
1 Tbsp. Dried Porcini Powder or Fine Chopped, Dried Porcini Mushrooms
2 Tbsp. Custom Culinary® Gold Label True Foundations Beef Liquid Stock Concentrate
1 tsp. Garlic, Minced
2 Tbsp. Green Onions, Chopped
1/4 cup Olive Oil
  Sauce Ingredients
1 cup Dried Porcini Mushrooms
1 cup Marsala Wine
1 Tbsp. Garlic, Minced
2 Tbsp. Shallots
10 cups Kale and Spring Greens Salad
PREPARATION

  1. Mix together Italian seasoning, porcini powder, garlic, green onions, Gold Label True Foundations Beef Liquid Stock Concentrate, and olive oil. Rub on flank steak.
  2. Marinate flank steak for 3 hours.
  3. Rehydrate dried mushrooms in marsala wine.
  4. Saute shallots and garlic for 2-3 minutes.  Add rehydrated porcini and marsala soaking liquid and cook to reduce. 
  5. Grill flank steak to desired temperature, remove and allow to rest 8-10 minutes before slicing.
  6. Serve over kale and spring greens salad and drizzle with porcini marsala sauce.
