What You'll Need

Amount Ingredients
1/2 cup Red Skin Potatoes, Large Diced, Cooked
1/4 cup Onions, Medium Diced
1/4 cup Spinach, Fresh
1/4 cup Fava or Cannellini Beans, Cooked
1/8 cup Asiago or Feta Cheese
2 Tbsp. Custom Culinary® Gold Label Harissa
3 ea. Eggs, Scrambled, Cooked
PREPARATION

  1. Sauté potatoes, onions and spinach for 2-3 minutes.
  2. Add Fava beans and hot, cooked scrambled eggs. Toss quickly.
  3. Place egg mixture in a hot iron skillet or casserole dish.
  4. Top with cheese and drizzle with Gold Label Harissa.
  5. Place in 350°F oven or under broiler to melt cheese.
