New Jersey-Style Garlic Blue Claws

Chef Smith's favorite simple garlic recipe, New Jersey-Style Garlic Crabs, features Custom Culinary® Master’s Touch® Roasted Garlic Flavor Concentrate. and consists of fresh cleaned cracked crabs sautéed over high heat with lots of garlic, onion, butter, ground pepper and chili flakes.

Yield: 2 servings

8 each Large Blue Claw Crabs 
1 Cup Onion, small dice
¼ Cup Olive Oil
1 Tbsp Old Bay Seasoning
2 Tbsp Custom Culinary® Master’s Touch® Roasted Garlic Flavor Concentrate
1 Tbsp Red Chili Pepper Flakes
2 cups Butter, softened
To taste Sea Salt & Pepper
½ cup Italian Parsley, chopped

  1. Place live crabs in an ice bath for approximately 20 minutes.
  2. When crabs are dormant, quickly clean by removing the shell, gills and apron flap.
  3. Rinse with cold water.
  4. After crabs are thoroughly clean, heat olive oil in large sauté pan and add the onions.
  5. Cook onions 1-2 minutes.
  6. Add the crabs and dust with Old Bay seasoning.
  7. Add the Garlic Flavor Concentrate and stir until well incorporated.
  8. Sauté crabs until cooked through, approximately 5 minutes.
  9. Add the chili flakes, softened butter and salt and pepper.
  10. Sauté an additional few minutes until butter begins to brown.
  11. Toss with the chopped parsley and serve with a crispy baguette.
