Roasted Mushroom Birria Tacos

Featuring Custom Culinary® True Foundations® Vegetable Birria Broth

Warm flour tortillas filled with savory roasted mushrooms and melted Chihuahua cheese, topped with cilantro and onions. Served with a cup of rich vegetable birria broth for dipping.

Yield: 1 serving

Amount Ingredients
3 each Tortillas, corn, 4"
6 oz. Mushrooms, oyster, roasted
3 oz. Cheese, Chihuahua, shredded
6 oz. True Foundations® Vegetable Birria Broth
1 oz. Cilantro, leaves, chopped, fine
1 oz. Onions, white, diced, small
PREPARATION

  1. Preheat the flattop or large sauté pan over medium-high heat for 2-3 minutes.
  2. While the flat top pre-heats dip each tortilla into the warm broth and place each tortilla in the pan
  3. Top each with cheese and mushroom.
  4. As each tortilla browns fold them over to make into a taco and let cook 2-3 minutes or until the cheese is melted.
  5. Once done, remove from pan and place onto a service platter. Sprinkle with the cheese and garnish with chopped parsley.
  6. Serve immediately.
