Shrimp Tostada in a Mojo Verde Latin Citrus Aioli

Crispy tostadas layered with lime shrimp, smashed avocado, and a bright Mojo Verde aioli made with True Foundations® Latin Citrus Flavor Concentrate, finished with fresh cilantro.
 

What You'll Need

Recipe Ingredients

Yield: 4 large tostadas or 8 little tostadas

Toastadas  
½ lbs. 16/20 shrimp
2 tbsp. Olive Oil
1 Lime zest
2 Avocados smashed with salt, pepper, and the juice of 1 lime
Mojo Verde Aioli  
½ cup Custom Culinary® True Foundations® Latin Citrus Concentrate
½ cup Mayonnaise
½ Serrano Pepper
1 Bunch Cilantro
1 tsp. Ground Cumin

Garnishes:
cilantro sprigs
PREPARATION

For the shrimp
  1. In a large bowl, toss the shrimp with olive oil, salt, and pepper until well coated.
  2. Heat a large skillet over medium-high heat.
  3. Add the shrimp to the hot skillet in a single layer.
  4. Cook for about 2-3 minutes on each side, or until the shrimp is pink and opaque·
  5.  Sprinkle the lime zest over the shrimp and toss to combine.
  6.  Remove the skillet from the heat.
For the Mojo Verde Aioli
  1. Combine all of the ingredients in a blender or processor, and season to taste
To assemble :
  1. Drizzle the mojo verde aioli over the shrimp.
  2. Spread the avocado smash on the tostada, assemble the shrimp, drizzle more of the mojo verde, and garnish with cilantro.
