Sweet N’ Spicy Korean Fried Chicken

24 each Chicken Wing with Tips
2 cups Corn Starch
1 cup Flour, AP
3 cups Passport Global Flavors by Custom Culinary® Korean-Style Sweet Heat Sauce
1/4 cup White Sesame Seeds, Toasted
1/4 cup Scallion, Sliced
PREPARATION

  1. Pat chicken wings dry and toss in corn starch and AP Flour to coat.
  2. In a heavy bottom pot on the stove, bring 3" of oil to 350°F.
  3. In batches of 6, fry wings until they just turn a pale golden brown. About 5 minutes. Transfer to a wire rack.
  4. Once all wings are fried, increase oil heat to 375 and fry wings again in batches of 5 until they turn a deep golden brown. about another 5 minutes.
  5. Immediately toss double cooked wings in Passport Global Flavors by Custom Culinary® Korean-Style Sweet Heat Sauce and garnish each dish with toasted sesame seeds and sliced scallion.
