Yield: 6 quarts

1 lb Penne pasta, uncooked (about 8 cups cooked)
4 cups Cannellini beans, canned, drained
6 cups (~2 heads) Broccoli crowns, chopped into ½” florets and stems
4 cups (~8–10) Mini bell peppers, sliced
½ cup Custom Culinary® True Foundations® Liquid Vegetable Stock Concentrate
½ cup Olive oil
   
1 pouch (2 lb) Custom Culinary® True Foundations® Tikka Masala Sauce
1 cup Heavy cream
1 cup Parmesan cheese, grated
1 cup (~1 bunch) Scallions, chopped
1 cup Cilantro, chopped
1 cup Feta cheese, crumbled (for garnish)
PREPARATION

  1.  Bring 1 gallon of water to a boil.
  2. Season the water with Custom Culinary® Vegetable Liquid Stock Concentrate.
  3. Add pasta and cook, stirring occasionally, until a few minutes shy of al dente.
  4. While pasta is cooking, preheat a rondeau or large sauté pan. Add olive oil, broccoli, and peppers. Cook until tender, about 6–8 minutes.
  5. Add the Custom Culinary® Tikka Masala Sauce and bring to a gentle simmer.
  6. Stir in cannellini beans, then add the pasta to the sauce. Cook together until pasta is al dente and well-coated.
  7. Finish with cream and parmesan. Adjust seasoning to taste.
  8. Garnish with feta, cilantro, and scallions before serving.
