Whiskey-BBQ Pork Chop

This dish harnesses the popularity of “alcohol infused” in a bold flavored, cowboy BBQ style bone in pork chop dish that is comfort food at its finest.


What You'll Need

Amount Ingredients
6 each Bone in Double Cut Pork Chop
1/4 cup Custom Culinary® Pork BBQ Spice Rub
1-1/2 oz. Whiskey
16 oz. Gold Label Demi-Glace Sauce
3 tb Oven Dried Charred Tomatoes (medium dice)
2 tb Caramelized Shallots (julienne)
1 tb Charred Fresh Jalapeños (small dice)
8 oz. Roasted Root Vegetables
 to taste Maldon Sea Salt
PREPARATION

  1. Liberally coat steak with the Pork BBQ Spice Rub.
  2. Pan Sear Pork Chop making sure to caramelize all edges well. The chop should have a blackened charred appearance.
  3. lace pork chop on oven safe platter and cook to desired doneness
  4. Deglaze pan with Whiskey
  5. Add Demi-Glace to pan and bring to a simmer.
  6. Add charred tomatoes, caramelized shallots and charred jalapeños and stir until well incorporated.
  7. Hold sauce for service.
  8. When pork chop is cooked to desired doneness remove from oven and let rest 15 minutes.
  9. Pool approximately 2 ¾ oz.of sauce on plate, carefully place chop atop sauce, and serve with a variety of roasted root vegetables.
  10. Finish pork chop with a touch of Maldon Sea Salt
