Citrus-Infused Fruit Salad with Mint Syrup

Salad  
6 cups Romaine Lettuce
1 cup Cucumber, diced
1 cup Tomato, diced
1 cup Charred Corn
Vinaigrette  
2 tbsp. Custom Culinary® True Foundations® Latin Citrus Concentrate
¼ cup Olive Oil
2 tbsp. Rice Vinegar
1 pinch Salt
PREPARATION

Citrus Mint Syrup
  1. Combine water, sugar, and honey in a small saucepan. Bring to a simmer, stirring until fully dissolved.
  2. Remove from heat and stir in lime juice, orange juice, Latin Citrus Liquid Flavor Concentrate, and mint leaves.
  3. Cover and steep 15–20 minutes.
  4. Strain and chill completely.
Fruit Salad
  1. Combine prepared fruit gently in a large bowl.
  2. Spoon 3/4 to 1 cup of chilled citrus mint syrup over the fruit and toss lightly to coat.
  3. Fold in lime zest if using.
  4. Chill 20–30 minutes before service to allow flavors to marry.
Garnish
  1. Cut off both ends (poles) of the orange, then slice away the peel and pith following the curve of the fruit. Using a paring knife, cut along the membranes to release clean, skinless segments.
  2. Pick mint leaves at base of leaf.
  3. Toast coconut flakes in a sheet tray covered with a silpat, one nice even layer
  4. Bake AT 325F no fan, no humidity for 5 minutes. Remove, stir around and return for 3 more minutes.
