Indian-Style Chicken Chop Salad with Tikka Masala Dressing

Recipe Ingredients

Yield: 40 appetizer-sized servings

  Chicken
5 lbs. Chicken thighs, boneless, skinless
2 pints True Foundations Tikka Masala Sauce*, set aside 1 pint for finishing
   
  Salad Mix
3 heads Romaine hearts
1/2 lb Baby Spinach
1/2 lb  Arugula
1/2 head Cabbage, shredded
   
  Vegetable Mix
1 ea Red onion, chopped
5 ea Roma Tomatoes, chopped
2 ea English cucumbers, chopped
   
1 lb Paneer cheese, crumbled
1 can Chickpeas
   
  Tikka Dressing
1.5 cup Plain yogurt
1.5 cup Mayonnaise 
3 cups  True Foundations Tikka Masala Sauce
1/4 cup Apple cider vinegar
to taste Salt and pepper
PREPARATION

CHICKEN
  1. Marinate cleaned chicken thighs in Tikka Masala Sauce or Indian-Style Butter Sauce overnight
  2. Char grill chicken thighs
  3. Large dice chicken thighs and set aside for service
 
SALAD MIX
  1. Shred cabbage and place in a bowl
  2. Chop all greens and place in a bowl
 
TIKKA DRESSING
  1. Mix all dressing ingredients together with a whisk and set aside
 
VEGETABLES
  1. Chop all vegetables and set aside
 
ASSEMBLE
  1. Mix all greens, vegetables, cheese and dressing in a bowl
  2. Add tikka dressing and toss the salad
  3. Plate the salad mix and top with grilled chicken
  4. Garnish with microgreens and serve with naan on the side
