Amount Ingredients
  Dressing
10 oz. Custom Culinary® Gold Label Bacon Onion Marmalade
2 oz. Apple Cider Vinegar
1/2 cup Bell Peppers, Red, Green, Yellow, Small Diced
2 cups Baby Spinach, Fresh
1/4 cup Green Onions, Sliced Thin
  Potato Salad
2 lbs. McCain Roasted Red Potatoes, Diced, Frozen
1 lb. McCain Sweet Potato, Diced, Frozen
PREPARATION

  1. Deep fry potatoes per instructions. Hold warm.
  2. While the potatoes are frying, prepare the dressing. In a medium sauce pan over medium heat, combine the Gold Label Bacon Onion Marmalade and the apple cider vinegar. Bring to a simmer to warm mixture.
  3. Assembling the Salad: In a large mixing or serving bowl, blend hot fried potatoes with colored bell peppers, baby spinach and green onions. Add warm Gold Label Bacon Onion Marmalade dressing and toss until evenly mixed. Serve immediately.
