North African Charred Vegetable Panzanella

Featuring Custom Culinary® Gold Label Harissa, North African Charred Vegetable Panzanella consists of charred summer vegetables, pita bread, torn soft herbs, and heirloom tomatoes are tossed with spicy and flavorful harissa sauce.

What You'll Need

Recipe Ingredients
½ cup Potatoes, sweet, peeled, ½ inch slices
2 - 4 Tbsp Custom Culinary® Gold Label True Foundations Liquid Stock Concentrate
1/4 cup  Onions, red, large dice
1 Tbsp Oil, extra virgin
¼ cup Pita, bread
   
½ cup Tomatoes, heirloom, beefsteak, large dice
1 Tbsp Basil, leaves, torn
1 Tbsp Parsley, Italian, leaves, torn
½ tsp Garlic, cloves, fresh, minced
¼ cup Peppers, bell, red roasted
½ cup Custom Culinary® Gold Label Craft Toppings Harissa
PREPARATION

  1. Fill a saucepan with water and the vegetable liquid stock concentrate.
  2. Bring to a boil.
  3. Add sweet potatoes and cook until fork tender.
  4. While the sweet potatoes are cooking, preheat the grill to high.
  5. Drain and place the sweet potatoes and the red onions into a bowl with the olive oil.
  6. Quickly grill the sweet potatoes, red onions and until they are charred and tender (about 2-3 minutes).
  7. Also quickly grill the pita bread.
  8. Place the grilled veggies and bread back into the stainless steel bowl adding in the tomatoes, herbs, garlic,
  9. peppers and half of the harissa, tossing gently.
  10. Place the salad into a mound onto the service dish adding the rest of the harissa sauce onto the plate.
