A juicy grilled chicken breast glazed with tangy-sweet Al Pastor sauce, layered with grilled pineapple, creamy chipotle mayo, crunchy cabbage slaw, and fresh cilantro on a toasted bun. A SoCal-style sandwich bursting with Latin street flavor!

  Al Pastor Chicken Sandwich
1 ea. Sandwich Bun (brioche or potato-style), toasted
1 ea. 4–5 oz Grilled or Char-Grilled Chicken Breast
2 Tbsp. Custom Culinary® True Foundations® Al Pastor Sauce (divided)
1 Slice Grilled Pineapple Ring (or 2 wedges)
¼ cup Cabbage Slaw (shredded red + green cabbage and carrot mix)
1 Tbsp Chipotle-Lime Mayo (see subrecipe)
2-3 ea. Cilantro sprigs, fresh, whole (or 1 tsp. chopped cilantro)
  Optional: 2 slices pickled jalapeños or a dash of Tajín® for heat
  Optional: Thin tomato slice or avocado (for added texture)
   
  Chipotle Lime Mayo (SUBRECIPE) Yield: ~4 servings
2 Tbsp. Mayonnaise
1 Tsp. Custom Culinary® True Foundations® Al Pastor Sauce
½ Tsp. Lime Juice
   
PREPARATION

Chipotle-Lime Mayo
  1. Whisk together mayo, Al Pastor Sauce and lime juice until smooth.
  2. Store under refrigeration up to 5 days, until ready to build sandwiches Sandwich
Al Pastor Chicken Sandwich
  1. Grill the chicken breast until fully cooked (internal temp 165°F). During the last minute of grilling, brush both sides with 1 Tbsp True Foundations® Al Pastor Sauce to glaze and caramelize.
  2. Grill the pineapple ring for about 30–60 seconds per side until lightly charred and warm.
  3. Lightly toast the bun for texture and hold.
  4. Assemble:
    • Bottom bun: Spread half the chipotle-lime mayo, add a layer of cabbage slaw
    • Middle: Place the glazed chicken breast, top with grilled pineapple, optional jalapeños, and cilantro
    • Top bun: Spread remaining mayo and close the sandwich
