Al Pastor Gyro

Familiar ingredients brought together in an innovative Latin twist on a classic Greek street food. Featuring Custom Culinary® Al Pastor Sauce and Custom Culinary® Gold Label Jalapeño Relish, Al Pastor gyro consists of al pastor marinated lamb, grilled pineapple, jalapeño tzatziki sauce, red onions, cilantro, mint, and an Al Pastor drizzle.

What You'll Need

Recipe Ingredients
  Al Pastor Gyro
1 ea Pita, warm
6 oz Lamb, Al Pastor-style spit roasted, hot, shaved thinly (see subrecipe)
2 tsp Jalapeño Tzatziki (see subrecipe)
1 Tbsp Pineapple, charred, small dice
garnish Onion, shaved, ¼ inch
garnish Cilantro, leaves, whole
garnish Mint, leaves, torn
2 tsp Custom Culinary® Al Pastor Sauce
   
  Al Pastor-Style Lamb (SUBRECIPE)
10 lb Lamb, breast, sliced, ¼ inch (or lamb cut of your choice)
2 lb Custom Culinary® Al Pastor Sauce
   
  Jalapeño Tzatziki (SUBRECIPE)
1 ½ cup Tzatziki sauce, prepared
½ cup Custom Culinary® Gold Label Craft Toppings™ Jalapeño Relish
PREPARATION

Al Pastor-Style Lamb (SUBRECIPE)
  1. Marinate lamb slices in al pastor sauce for 2-4 hours.
  2. Assemble and layer marinated lamb onto spit.
  3. Wrap with plastic and let sit in the cooler overnight
  4. Preheat the rotisserie, gyro machine, or trompo on medium-low heat.
  5. Place marinated spit lamb into machine and begin to cook.
  6. As the lamb slowly cooks, using a long slicing knife, cut off some of the meat into a pan.
  7. Use the charred and marinated meat to build sandwiches, top salads, or use in various creative ways.
Jalapeño Tzatziki (SUBRECIPE)
  1. Mix both ingredients in a mixing bowl until well incorporated.
  2. Put into a squeeze bottle or storage container.
  3. Keep refrigerated until use.
Al Pastor Gyro
  1. Top the warm pita with shaved lamb and a dollop of jalapeño tzatziki.
  2. Top with pineapple, onion, fresh herbs, and al pastor sauce.
  3. Wrap in foil and parchment and cut in half.
  4. Serve immediately.
