Amount Ingredients
1½ lbs fresh ahi tuna, seared rare and sliced (or use sushi-grade poke cubes)
1 cup shredded napa cabbage
4 large spinach tortillas
1 cup cooked jasmine rice (optional for bulk)
½ cup mayonnaise or spicy aioli
  Al Pastor Pineapple Salsa:
1 cup fresh pineapple, diced
½ cup diced red bell pepper
¼ cup red onion, diced
¼ cup cilantro, chopped
¼ cup Custom Culinary® Al Pastor Sauce
1 Tbsp lime juice
PREPARATION

1.    Combine salsa ingredients; chill for at least 20 minutes.
2.    Spread mayonnaise or aioli over tortilla.
3.    Add cabbage, rice (if using), tuna slices, and spoon over pineapple salsa.
4.    Roll tightly; cut in half on a bias for presentation.
