Birria Grilled Cheese Dipper

Golden, buttery grilled sourdough stuffed with melty cheese and shredded beef birria, served with a hot cup of rich True Foundations® Beef Birria Broth for dipping.

Amount Ingredients
2 slices sourdough bread (or telera/bolillo roll, sliced flat)
1 Tbsp softened butter or mayo (for toasting)
½ cup  shredded mozzarella cheese (or Oaxaca/monterey jack blend)
½ cup shredded beef birria (see quick-prep method below)
4 oz Custom Culinary® True Foundations® Beef Birria Broth (hot, for dipping)
  Optional: sprinkle of chopped cilantro or pickled onions for garnish
   
  Shredded Beef Birria (Batch Prep Idea):
2 lbs cooked beef chuck roast or brisket, shredded
1½ cups Custom Culinary® True Foundations® Beef Birria Broth
1 Tbsp tomato paste (optional, for richness)
PREPARATION

  1. Simmer shredded beef and broth (with optional tomato paste) over medium heat until well-coated and warm. Hold warm for service. For speed-scratch prep, pre-braise or steam-heat with broth in batches.
  2. Butter or mayo one side of each bread slice.
  3. On the non-buttered side of one slice, layer half the cheese, then the warm shredded birria, and top with remaining cheese. Close with second slice, buttered side out.
  4. Toast on a flat top or sandwich press until golden brown and crispy on both sides and cheese is fully melted (about 3–5 minutes per side).
  5. Slice the grilled cheese in half or into strips (for dunking), and serve with a small cup of hot True Foundations® Beef Birria Broth on the side for dipping.
  6. Optional Add-Ons: Add grilled onions, pickled jalapeños, or chipotle mayo inside the sandwich
