Chicken Gravy Chicken Sandwich
1 ea                       4” Biscuit, Split
1 ea                       Gravy Fried Chicken (see subrecipe)
¼ Cup                    Custom Culinary® PanRoast® Chicken Flavored Gravy Mix (see subrecipe)
2 Slices                 Bacon
1 ea                       Sunny Side Up Egg
1 tsp                      Chives, minced
 
Gravy Fried Chicken (SUBRECIPE)
1 lb                         Chicken Thigh, Boneless, Skinless
1 pt                        Buttermilk
1 Cup                    AP Flour
½ Cup                    Custom Culinary® PanRoast® Chicken Flavored Gravy Mix

PREPARATION

Chicken Gravy Chicken Sandwich
  1. Assemble the Chicken Gravy Chicken Sandwich from bottom to top: Biscuit bottom, gravy fried chicken, chicken gravy, bacon, sunny side up egg, chives, biscuit top.
 
Gravy Fried Chicken
  1. Marinate raw chicken in buttermilk for up to 24 hours before dredging and cooking.
  2. Pre-heat fryer to 350F.
  3. In a large mixing bowl, whisk together all-purpose flour and powdered chicken gravy.
  4. Remove the chicken from the buttermilk and coat in the gravy/flour mixture. Dip the chicken in buttermilk once more followed by a final dip in the flour/gravy mixture.
  5. Fry the chicken for 9-12 minutes or until the chicken is golden brown and crispy and has an internal temperature of 165°F. Serve immediately.
 
Custom Culinary® PanRoast® Chicken Flavored Gravy
  1. Bring the water to a boil.
  2. Slowly whisk in chicken gravy mix until a smooth sauce with no lumps is formed.
  3. Hold hot until ready to serve.
