Chili Corn Sauce

A robust sauce to add intense flavors to any dish. Featuring Custom Culinary® Gold Label Beef Base, Chili Corn Sauce brings together the bold flavors of green bell peppers, garlic, chili powder, cayenne pepper, dry white wine, cream, corn, and red bell peppers.

What You'll Need

Yield: 1 gallon

Amount Ingredients
1/8 cup Vegetable Oil
8 oz. Onions, diced
4 oz. Red Bell Peppers, diced fine
4 oz. Green Bell Peppers, diced fine
1/4 cup Garlic, minced
1/4 cup Chili Powder
1/8 tsp. Cayenne Pepper
1/8 tsp. Black Pepper
1/2 cup Dry White Wine
2 oz. Custom Culinary® Gold Label Beef Base
6 cups. Water
1 qt. Heavy Cream
1 lb. Corn Kernels, frozen, thawed

  1. In a 4-qt sauce pan, heat oil over medium high heat. Add onions, red peppers, green peppers, and garlic. Sauté 5-7 minutes, stirring frequently.
  2. Add chili powder, cayenne and black pepper, mixing well. Sauté over low heat 2-3 minutes, stirring constantly. Add wine to deglaze pan.
  3. Add Gold Label Beef Base and water. Heat to boiling. Gently boil 8-10 minutes, stirring occasionally.
  4. Add cream and corn. Heat to boiling. Reduce heat and gently boil 5-7 minutes until corn in tender, stirring occasionally.
