QTY INGREDIENTS
1 qt Vegetable oil
50 lb Potatoes, un-peeled and cut in large cubes
1 cup Salt (adjust to taste)
1 cup Red chili powder (adjust to taste)
32 lb Custom Culinary® True Foundations® Tikka Masala Sauce
5 qt Water
1 cup Sugar, optional
6 cups Fresh coriander (cilantro) leaves, chopped
PREPARATION

  1. Heat oil in a heavy-bottomed pan.
  2. Add cubed potatoes and sauté for 3-4 minutes.
  3. Season with salt and red chili powder. Sauté for 1 minute.
  4. Add Tikka Masala Sauce and water and let mixture simmer over medium to low flame until potatoes are cooked – about 10-15 minutes, stirring occasionally.
  5. Add sugar, if desired, then simmer.
  6. Turn off the heat. Transfer it to a serving bowl, garnish with fresh coriander leaves and serve.
