Blueberry Thyme Old Fashioned

  Blueberry Thyme Old Fashioned
1 ea Ice. large format cube
1.5 oz Whiskey, Bourbon (can substitute Rye)
.5 oz. Blueberry Thyme Simple Syrup (see sub recipe below)
  Orange Zest, for garnish
  Thyme branch, for garnish
1 ea Candied Bacon for garnish (see sub recipe below)
   
  Blueberry Thyme Simple Syrup  | SUBRECIPE | Yield: 3.5 cups
2 c. Sugar, granulated
2 c. Water, tap
2 c. Blueberries, fresh
½ T. Zest. orange
¼ c. Thyme, fresh
   
  Candied Bacon | SUBRECIPE | Yield: 16 servings
1 T. Custom Culinary® Pork Barbeque Spice
¼ c. Sugar, granulated
½ T Sugar, brown, dark
8 ea. Bacon, thick sliced
PREPARATION

Candied Bacon
  1. In a small mixing bowl, mix the pork barbeque spice and sugars together.
  2. Lay bacon out on a parchment-lined sheet pan. Bake in a 350F degree preheated oven for 5-7 minutes.
  3. Remove from oven and drain off excess fat. Then, coat the bacon in the sugar-spice mix.
  4. Return to the oven to cook and caramelize for 2-4 minutes.
  5. Pull bacon from the oven, carefully remove it from the pan, and add it onto the cooling rack so it can finish crisping as it cools.
  6. Set aside at room temperature for later usage.
 
Blueberry Thyme Simple Syrup
  1. Add all the ingredients into a small saucepot and slowly bring to a simmer.
  2. Cook for 5 minutes over low heat.
  3. Strain and cool to use in your recipes. Keeps in a squeeze bottle for a week.
 
Blueberry Thyme Old Fashioned
  1. Add the ice cube to a low-ball glass.
  2. Pour the whiskey and syrup over and stir with a bar spoon.
  3. Garnish with the orange zest, thyme branch and candied bacon.
