Spritz

Large Cucumbers, peeled and juiced
to yield 2 1/2 quarts fresh cucumber juice
16 Each
Limes, freshly squeezed
to yield 16 oz, fresh lime juice
2 oz
Latin Herb Liquid Flavor Concentrate
16 oz
agave syrup
48 oz
club soda
Garnish
1/2 each
Large English Cucumber, FOR GARNISH
5 sprigs
Mint, fresh
10 each
5" paddle skewer
PREPARATION
Batch Preparation
In a large pitcher or cambro, combine the Latin Herb Liquid Flavor Concentrate, cucumber juice, lime juice, and agave syrup. Stir well.
Chill the base thoroughly.
Just before service, gently stir in the club soda to maintain carbonation.
To Serve
Fill glasses with ice. Pour 6–7 oz of the spritz over ice.
Slice the cucumber into a 5" long rectangular slice on mandolin. Weave onto Skewer.
Garnish with cucumber skewer and 1/2 sprig fresh mint.
CHEF'S TIP
Add the club soda last to preserve lift and brightness.
This batch holds well (without soda) for 24 hours refrigerated. Add soda to order or just before service.
The Latin Herb flavor should read cooling and herbal, not sweet or savory.
