Exotic Mushroom Duxelle

This flavorful and versatile filling can be used across your menu as meatless ingredient.

What You'll Need

Yield: ~ 3 quarts

QTY INGREDIENTS
¼ c. Oil, vegetable
4 c. Mushrooms, domestic,  small dice
4 c. Mushrooms, lions mane, small dice
4 c. Mushrooms, shitake, caps, small dice
4 c. Mushrooms, oyster, small dice
4 c. Onion, Spanish, small dice
2 c. Carrot, peeled, small dice
¼ c. Custom Culinary® Roasted Garlic Flavor Concentrate
2 c. Bread Crumbs, panko
1 c. Mayonnaise, vegan
3 c. Bulgur, cooked, cooled
PREPARATION

  1. Preheat 2 large sauté pans over high heat for 2-3 minutes
  2. Add half of the oil to each pan and begin to sauté the mushrooms
  3. Sear all the mushrooms and once all browned add them all into one pan
  4. Add the onions, carrots, garlic conc. and cook until there is little moisture
  5. Once dry and sautéed remove from the heat to cool completely
  6. Transfer to a mixing bowl and add the remaining ingredients
  7. Stir to bind and taste for final seasonings
  8. Once mixed transfer mixture to a labeled plastic storage container for usage
